Paparille e sardelle

(for 4 people)
 
Ingredients:
 
• 500 gr. of goat horn peppers
• 20 salted sardines
• 20 ml. of vinegar
• 100 gr. of granite type flour
• extra virgin olive oil to taste
 
Method

Clean the peppers and cut into 1 cm wide strips, put them to dry on a cloth.
Desalt the sardines under running water, immerse them for 30 minutes in a bowl with a solution of water and vinegar.
Drain the sardines and dry them with absorbent paper; flour them well and fry them for 2 minutes per side in a large non-stick pan.
To the oil of the sardines add a little more oil to brown the peppers for 10 minutes, taking care to cover them with a lid and turning them every now and then.
It is recommended to serve with "scacciafame" or on slices of Campli bread.
