Ingredients:
• 600 gr. of waxed sheep's milk caciotta
• 1 whole egg
• 300 gr. of granite type flour
• 120 ml. of carbonated water
• 1 truffle of 30 gr.
• peanut oil for frying.
Method
Prepare the batter by dissolving the flour in cold sparkling water; grate the truffle and add it to the whole egg, beat well and mix with the batter. Let it rest in the fridge for 1 hour.
Wash the cheese and dry it; cut into 0.5 cm slices and pass it in flour.
Prepare a large pan for frying, add 1 finger of seed oil and heat to 160 °.
When the oil is ready, pass the slices of cheese in the very cold batter and fry two slices at a time.
Dry on straw paper and serve immediately.
